Parabuio, altitude 400 -440 m. a.s.l. - south - east exposure

Manual harvesting of the grapes in boxes with careful selection of the bunches. Destemming and very soft crushing and start of alcoholic fermentation. Extreme care is taken during pumping over, which is always very light and repeated.

After racking, there follows a period in cement vats and subsequent ageing in new and second passage barriques for 24 months.

Aromas of blackcurrant, morello cherry, vanilla, butter and cream appear from the start, gradually giving way to spices and grilled notes.

The mouth is full, powerful and soft, followed by an important freshness that cleans the mouth and lengthens the sip.

The soil, rich in marl, favours gas exchange between the air and the soil, allowing the Merlot to ripen perfectly even at high altitudes and giving the grapes balance and an excellent aptitude for ageing.
